Color
Good color intensity with tones ranging from greenish-yellow to gold.
Aroma
Pronounced intensity harmonizing well the aromas of fruit and wood.
Taste
Good volume in the palate with balanced acidity and pleasant aftertaste.
Technical Characteristics
Manual harvest into 20 kg crates in the last two weeks of January. Average production: 10.000 kg/ha
Mechanical destemming and light pressing to release the juice leaving grapes whole
Cold maceration (cryomaceration) at 10ºC for about 8 hours
Pneumatic pressing
Alcoholic fermentation at 15ºC. Eighty percent of must in stainless steel tanks and 20% in new American oak barrels
Complete spontaneous malolactic fermentation
The wines are blended and stored in stainless steel tanks until bottling
Alcohol: 13.44 % v.v.
Service: Ideal temperature between 10º - 12º C
